How To Make Mango Shrikhand!

Mango shrikhand is a deliciously sweet and fruity take on an Indian classic. Incredibly simple to make and containing just a handful of ingredients, Alphonso mango shrikhand is an easy dessert to whip up in no time at all!


Traditionally, shrikhand recipes can be arduous and lengthy, with original recipes commonly requiring yoghurt to be strained, hung and drained in a muslin cloth for 3 to 4 hours in order for the yoghurt to thicken and turn sour. We’ve slightly altered the process in order to make our recipe quick, easy and no fuss, taking less than 10 minutes from start to spoon!


Using Red Rickshaw’s finest Alphonso mangoes, our mango shrikhand recipe is guaranteed to go down a storm! Light, refreshing, sweet and bursting with flavour, this is the perfect to wow your family and friends while taking no effort at all!

Ingredients

Seeds from 6 Cardamom pods.

30g Almonds

30g Pistachios

2 Alphonso Mangoes

1 Tbsp Milk

4 strands of Saffron

250g Greek Style Natural Yogurt

1 Tbsp Icing Sugar


Recipe - Cooking Time: 10 mins

Step 1: Firstly, grind a your cardamom seeds. Then, separately grind your pistachios and almonds.


Step 2: Mash your mango into pulp - this will be easy with our Alphonso mangoes!


Step 3: Add your saffron to a little warmed milk and give a quick stir. Once the saffron is infused into the milk, add this to a fresh bowl of natural yoghurt and whisk together.


Step 4: Add a tablespoon of icing sugar and most of your ground cardamom and nuts to the mixture. Leaving a sprinkling of both for a garnish!


Step 5: Add your mango pulp to the mixture and continue to mix thoroughly.


Step 6: Spoon the mixture into your dishes and add a final few squares of mango and sprinkle the remaining nuts and cardamom on top to finish it off!
